Roger Martin: (Executive Chef of Hyatt on the Bund) We start to think what is the element, the key element to promote the Ball from the culinary side. Actually we have two chefs from Austria. After we found out the Ball has started from 17th century and developed into several stages. Then we start to figure out the menu, of course, classic dishes like Goose Liver and Semolina Dumplings. And we thought we should implement these to the menu, as this classic ball should go with classic food. For desert, we have the Pastry Chef Johann Dreisger who will make apple studded old Vienna style and chocolate pudding. So basically, that is how we got the menu.

Matthias Fletzberger: (Artistic Director and Conductor) We try to have a mixture of real Viennese ball music, popular operatic music and some surprise which is by composing Strauss.

Martin Grund: (Dance Master) To bring the Viennese Ball, the traditional dance to this ball in Shanghai, we have the Midnight Quadrill where the audiences will be invited to join in the group. I will show the audiences how to dance.

Martin Grund: (Dance Master) This has been my second time to Shanghai, and I really like the city especially the area around the Bund. And I think it is really exciting to have a Viennese ball especially in foreign countries.

Lidia Baich: (Violin Soloist) I am very happy to be back in Shanghai. It is not my first time but I really enjoy every time when I am here. This is very special because we have a Viennese ball here, it is something very traditional in Austria and right now from Austria to Shanghai, and I am very happy and proud to be part of it.

Michael Heim: (Tenor) I am proud to be here at the first Viennese Ball in Shanghai. I hope we can open the hearts of Chinese people and come back next year.

Birgitta Wetzl: (Soprano) It is a great pleasure for us. I think the Viennese waltz is a wonderful music, it can bring people together all over the world. And I hope this ball will also bring people of all nations together and bring the authentic music to Shanghai.

Alina Koroleva: (Ballet Dancer) I also want to say that it is my pleasure for me to dance here though it is my first time. The city is very beautiful and I am so happy to dance with Gregor. We dance so matched.

Gregor Hatala: ( Ballet Dancer& Choreographer) It is happy to be here and to be part of this show. We will perform two choreographies, which is classical and Viennese style. So we are so excited to the show tomorrow.

Markito: (DJ) My name is Mark or DJ Markito. We arrived late last night and I am still a little tired. But the weather is nice and I start to look at the city, it is beautiful. We have lots of musicians from Vienna and my role is to make some music at one or two AM when people are drunk. And then I will DJ and play some house or dance music for the people to dance on the dance floor.

Julie Zhang( Host): Hello everybody, this is Julie Zhang. I have the pleasure to meet a lot of people here tonight. Thanks to Chef Louis of Escoffier who is starting chef’s talk every month to organize all the people who are in food business to meet and network. He will explain to you about this. Tell us about what is Chef’s talk.

Louis-Antoine Giroud (General Secretary, Disciples Escoffier International China):
Chef’s talk is a meeting for the chef initially and we never liturgy in China. So the Sunday is the concept for the disciples Escoffier international. And we always try to arrange to meet the chef. Now I decided to do it in China. This is the first time tonight in Shanghai.And I also open to other people, not only chef, supplier or generalist. Small like network evening for everybody. So the main activity for chef’s talk is to be able to be their together to have a drink , to share information. The chef talk about food recipe, supplier will talk about new product, generalist will be interested to hear news from chef because sometimes it’s difficult for them to bring the kitchen and speak to the chef. And it’s all these about in fact. But the mainly important thing is food and beverage .This is our passion and this is why we are here tonight.

Hi,my name is Lionel and I’m in Shanghai three years and China five years. Tonight I came to chef’s talk to meet some new faces in Shanghai and I think it’s great to see some people that working in the same industrial and let’s see what’s going on tonight.

Francoise Carrot-Diament(Wine Instructor):
My name is Francoise Carrot-Diament and come from Lyons. Tonight we are here with friends to talk about the Escoffier association which is the association of chefs of French chef around world.

Ni Hao,wo jiao Michel Diament,wo shi Shanghai de faguo ren.(Hello ,my name is Michel Diament,I’m Shanghai French) and that’s all my Chinese in fortunately. You know I’m in Shanghai, I’m here today for my friend of Escoffier.(But I’m in Shanghai.)When I was in Shanghai with my wife ten years ago, day and day to sell wine for all our friends. Wine gone by friends. And now I’m working for the Rhone Alps and for the city of Lyon to do a best relationship between Shanghai and our city of Lyon and regional run up.

Florie Deswaziere (Owner of Le Comptoir) :
My name is Florie and I’m owner of this Le Comptoir and we opened on September 2012.I’m French and I come from south of France. We start to do that because I always be close to the chefs when I was working with wine and I’m really food lover . So I think it’s really good things to do and try to bring all the people working in the same food business together. It’s good to have a good network and link. So I think it’s good things.

Shanghai Residence of the French Consul
July 14th, Shanghai, July 14th marks the French National Day. On that day in 1789, people in Paris stormed the Bastille fortress-prison, today symbolising the up rise of the modern nation. This year, the French Consul General in Shanghai held a reception at the Residence of the French Consul. Qiu Shu Wei(邱曙苇) who sang the March of the Volunteers Chinese national anthem and La Marseillaise, the French national anthem opened the evening in a formal manner before the Honourable Consul-General of France in Shanghai, Mr Emmanuel Lenain, spoke of the French presence in Shanghai and the cooperation they seek with China. According to him, the number of French citizens registered in Shanghai has surpassed 2,300, up 15 per cent in 2012. Cultural exchanges have increased, in particular with The Festival Croisements 2010, one of annual global cultural events which were extended to the city of nearby Shanghai. On a more serious note, according to the official data, the exports and imports between Shanghai and France has reached near 4 billion USD from January to June. The two countries have a vast potential for collaborations in tourism, transport, environmental protection, finance and culture. Following this, the guests were entertained byAfter the formal celebration, the annual party took place as usual at Garden of Shanghai French Consulate, organised by the French Consulate and gathering nearly 200 people.

2012 celebrates the 40th anniversary of the diplomatic relations between China and the Federal Republic of Germany. To further strengthen this comprehensive strategic partnership, Mr. Li Shoubai(李守白), the celebrated Shanghai contemporary heavy-colour painter and paper-cutting master, was invited by the Hamburg China Association and Shanghai People’s Association for Friendship with Foreign Countries to hold his solo exhibition in Hamburg, Germany. The exhibition is from 8 August 2012 to 31 August 2012 at the Finance Bureau Building in Hamburg, Germany.

Innovative Hospitality Training at The Peninsula Shanghai

The Rosamonde Aviation Lounge, The Peninsula Shanghai
The Peninsula Shanghai celebrated the launch of their ‘Diploma of Management Studies’ in the Rosamonde Aviation Lounge. This new and exciting project is designed to assist ambitious, young people to further their careers not only in Shanghai but throughout China. The scheme gives Chinese hotel managers the unique opportunity to study part time and work at The Peninsula Shanghai. The project is a joint venture with The Peninsula Shanghai, the Institute of Hospitality UK and the Vocational Training Centre in Hong Kong. Joseph Chong, General Manager of The Peninsula Shanghai and a Fellow of the Institute of Hospitality is the creator of this project. He has worked very closely with both institutes to ensure that the course is comprehensive both in theory and practice. In a speech, he gave thanks to all who have been involved and have contributed to the scheme. Professor Raymond Pine, Bsc, MPhil, PhD, Dean of the Faculty of Management and Hospitality, Technological and Higher Education Institute of Hong Kong, also a Fellow of the Institute of Hospitality gave an inspiring speech on behalf of Philip Rossiter, Executive Director, Institute of Hospitality, UK. Lecturers and students involved in the scheme were in attendance for the inauguration of the ‘Diploma of Management Studies’.

Prince of Peace has a Charity Heart

“Love in Melody III”, the third charity concert to be held at Bund 18 to raise funds for the Ailing Foundation. Shanghai Wakyo opened the concert with a Japanese Taiko Drum performance. Other artists included, Zhu Dan, one of China’s most promising artists, who gave a violin recital, Zhang Ju’s students performed Kunqu Opera and also the Bamboo Flutist, Mao Yulong performed. Zhang Ju, UNESCO designated Artist for Peace in 2011 and “Prince of the Kunqu Opera” gave a very moving performance of Kunqu Opera. The finale of Zhu Dan, Mao Yulong and Zhang Ju was spellbinding. During the evening Vana Teng, the organizer of the concert, gave a speech about the 3 charities that would benefit from the concert and a silent auction of artwork took place. Mrs Kitty Xia, Deputy Secretary-General and spokesperson for the Shanghai Charity Foundation, also gave a speech about the charities. The proceeds from the concert and silent auction will help fund 3 orphaned babies with surgery, help disadvantaged children in the Huangpu District and orphans of the Japanese earthquake in March last year.

Li Shou Bai (李守白) Year End Party

Clouds Bar, 200 Taikang Road, Luwan District
Li Shoubai, and Joyce Shen, owners of Shoubai Art and their daughter Lucy, hosted a VIP Cocktail Party at Clouds Bar. They gave thanks and appreciation to their loyal customers and friends who have given them continual support in the past. Li Shoubai’s Heavy Colour Paintings adorned the walls depicting scenes of the old Shikuman life style. Speeches were made, a song was sung by Edmund He and Qin Lei amused the guests with impersonations of famous people. The evening was concluded by Lucy, on behalf of Shoubai Art, wishing everyone a very happy and successful 2011.
